Post Sodium Nitrate (Saltpeter). Anyone used it?
So I bought a pork belly the other day with the idea of salting it for bacon (as per Hugh Fearnley-Whittingstall's Meat book). He suggested using Sodium Nitrate (Saltpeter) as an optional additive. Has anyone used this in their curing? What would be the downside of using this additive?
