Post Sodium Nitrate (Saltpeter). Anyone used it?
So I bought a pork belly the other day with the idea of salting it for bacon (as per Hugh Fearnley-Whittingstall's Meat book). He suggested using Sodium Nitrate (Saltpeter) as an optional additive. Has anyone used this in their curing? What would be the downside of using this additive?


Currently in possession of 1 husband, 2 kids, 2 cats, lost track of the chickens, now there's just alot .
