Its been a while since i last posted so figured i'd make this a good one and get some people drooling at the same time.
After a sojourn down to Victoria 2 weeks ago i found myself in the unenviable position of having an excess of venison (had my esky been bigger i could have had more).
After hanging the back leg and 2 backstraps in the cool room for 5 days i set about the skinning and boning exercise and was left with 18 kgs of fresh meat.
A quick call to a mate was all it took to organise a sausage making afternoon and armed with appropriate libations we set about the whole sausage making thing.
Sausage meal on offer was Bratwurst, Chorizo and Tomato & Onion. Coming from german background it was hard to go past the brautwurst.
Thin sausage skins were the order of the day this time (we used thick last time) and whilst they do cook faster they also take longer to make.
Needless to say once we had finished a test of the final product was made to ensure quality control was in order :)
Not a bad way to spend an afternoon with a few beers and i know have 6 kgs of sausage, 4 kgs of mince and another 4 kgs of steaks.
Winter will be very enjoyable this year.
I've added some photos so everyone can enjoy but accept no liability for damage to keyboards, computers or laptops due to excessive drooling.

Sounds like an awesome gourmet way to knock of an afternoon :thumbright

Did you find the thinner sausage skins much more difficult to work with than the thicker ones, as far as breakage is concerned?
