Quality of Dexter Meat at 2 Years?

Post Quality of Dexter Meat at 2 Years?
Does anyone know what the quality of the meat from a Dexter Steer will be like at 2?

We originally had planned to take our steer to the abattoirs early this month however the mobile cool room we have on order wont be ready until March which pushes our abattoir trip out to April.

The steer will be close to 2 years by then does anyone have any idea if this will affect the quality of the meat we get from him? I was under hte assumption that 18 months is is around the time for best quality.

I wouldn't be worried, our friends who we've purchased our dexter's of which one is a chef swears by eating them around the 3 year old mark.
So if he is recommending that I doubt the change from 18 months to 24 will affect the meat :)

Mine are heading for heir long holiday in a cold lim ate at 24-26 months!
