Post Home Grown Pork - Photo Heavy
We recently had our second batch of pigs done for our freezers.
This time we did 3 young sows that were between 60kg-70kg carcass weight & one older sow who had arthritis in her back hock, she dressed out at 115kg mins her head.
This time as a test for how it would work on a commercial scale we went through the Wolondilly Abattoir & then had them transported back to the Bungendore Butcher to cut up & cure.
Yesterday we picked up our fresh cuts and to celebrate we had a pork rack for dinner with port & blue cheese sauce....delicious!
We will pick up our cured products next week but in the mean time here are the pictures of all our fresh pork produce!

That all looks so great Cai - can't wait to be doing that one day - at the moment we are fortunate to be at least buying our pork direct from the grower - the kids absolutely love his cured product - lachschinken, ham and bacon, smokey flavours to die for!

We now have all the cured cuts of meat back... 57kg of Bacon & 47.2 Kg of Leg Hams :)

Mouthwatering - 57kg of bacon!! Impressive - you can certainly add up the per kilo savings - we are paying $30/kilo for bacon but that is less than half the price of another stallholder - Maggie Beer's daughter, Saskia. You will be eating like kings - what have they told you re the keeping times of the products?

Thanks yes it is rather mouth watering we were paying $20/kilo for bacon which turned out to be "free range" so we can definitely see the $$ savings!
As for keeping times we've been told 12 months should be fine, now to get making sausages with the near on 100kg of mince :)
