It is important to have a market before you start out. For example, the restaurant trade will accept a fat cover of up to about 18mm, whereas the butcher trade want no more than 12-14mm. People tend to shy away from pork with black hairs (hence the use of white boars as white is genetically dominant in pigs). If using LB sows, you can get B&W pigs, but they are called "Blue Merles" and they have white hair on the black patches. The is only a smaller niche market for black haired pigs in the restaurant arena.

We run a Large White x over pure Saddles the resulting Blue Merles, photo taken at approx 8wks;
Our last pig for the spit dressed in at 19.2kg with a fat score of 11mm.

Post Re: Pig stuff
I'm looking to get hold of a (purebred) Large White boar. Any suggests of where I might find one.

Cheers,
Alan

farm stock often seems to have the odd one listed for sale & if someones selling large white sows or piglets chances are they may have a boar?

I do keep an eye out but the difficulty is determining if they are talking about a "Large White" pig or a "large white pig" ...
