I'm not entirely sure of the type of tree, but they grow these really large bunches of tiny white flowers and they smell terrible.. They really are horrible things.

Are all the trees the same type? If it was my garden I would get rid of the offensive tree/s and plant something small but deciduous in the area you are growing in now and move the veggie patch back a bit. That way the tree would give protection from the harsh sun light yet still let winter sun thru. However, I've never lived in Canberra so what works for me here in Perth might not work for you, and if you are going to move to your large property it would be a waste of time and energy!

Sadly the tree can't be moved as it is huge and its a rental house so the landlords would probably kill us.

Thankfully the tree has its uses, it acts as a screen from the people next door.

Oh well. You are doing a great job anyway :thumbright and sounds like you are starting to use pots so that is another good solution. The trees will be good to put the pots under as suggested in your pumpkin post.
