Post Ginger Beer Recipe Non Alcoholic
Here is a recipe my Aunty dug up out of an old recipe book she had lying around.

It seems to work awesome, i did try and make an alcoholic alternative and it turned out not tasting as great as the non alcoholic, very bitter and tasted a lot like alcohol.

The 2nd culture normally produces a better tasting batch, and it keeps getting better as it progresses. My only problem was on my first batch i used large 2 L bottles and it didn't create enough bubbles. It works fine in old 600m bottles or smaller bottles.

No matter how hard i try i cant get anywhere close to that bundaburg taste. If only they didn't have so much preservatives !

bomierobert - I read in a home brew bok a while back that the amount of air gap between the top of the brew and the cap can have a significant effect on the carbonation of the brew. From memory not enough gap was worse than too much gap so Im thinking maybe with the bigger bottles you need to leave a larger air gap.

My recipe has quite a bit of lemon juice in it, I will dig it out if you like.
Reading that reminded me of something that I can look back now on and smile.
It was a hot day and I had been slogging away for hours clearing blackberries. I had hit the wobbly knee stage of exhaustion, so I sat down under a tree and thought of the last bottle of ginger beer in the fridge. I asked one of the boys if he would go and get it for me and off he trotted happily up to the house. The helpful kid ran all the way back with it. I opened the screw top and the whole bloomin lot was so shaken up that it came out of the bottle like a fountain , hit the branches above and rained down on me.
I could have cried.

Yeah, my recipe calls for a fair bit of lemon juice and tartaric acid. Even without shaking them up I find I have to ease them open, cos they fizz up like a fountain.

Well I finally got around to bottling my adaption of the above recepie.

The biggest difference was the 7 days turned into about 4 weeks :o

Though I only added the ginger and sugar for about 2 weeks or so :o

It tatsed quiet good though when I bottled it but rather heavey :scatch but with a bit of carbonation it should lighten up!!

Made 4 1.25l bottles BTW.
